A slow cooker is the perfect kitchen device for making easy, delicious meals that simmer in their own juices. You can create healthy low-fat, low-calorie soups, stews and other dishes with vegetables and meat. Choose more whole and low-fat ingredients and avoid adding store-bought sauces, which are high in calories, sugar and salt.

Bean and Vegetable Chili

Slow-cook a delicious bean chili for a low-fat lunch or dinner. Simmer red kidney beans in a sauce of tomatoes and other vegetables. According to the USDA National Nutrient Database, a cup of cooked kidney beans contains no cholesterol and only 0.88 grams of total fat. It also provides you with 15.35 grams of protein and 11.3 grams of fiber, to help you feel full longer. Use low-sodium canned beans or soak and boil dried beans. As an alternative, try black beans, lima beans, chickpeas and other types in a slow-cooked bean and vegetable stew.

Lentil Soup

Lentils are rich in protein and fiber and low in fat and cholesterol. A 1-cup serving contains a whopping 15.6 grams of fiber, no cholesterol and only 0.75 grams of total fat. Make a savory lentil soup in your slow cooker using low-sodium vegetable broth, with dried or fresh herbs for flavor. Serve with a side of whole-grain bread with a drizzle of olive oil instead of butter, to keep your meal low in saturated fat.

Chicken Stew

Chicken is a good source of lean protein and can be part of a low-fat meal. Slow-cook a chicken and vegetable stew that will provide up to 366 calories per serving, including 13 grams of fat and 30 grams of protein. Use low-sodium chicken broth, and leave out garnishes such as bacon to reduce the calories. Serve the chicken stew with whole-grain bread, brown rice and other fiber-rich and low-fat sides.

Low-Calorie Beef Stew

Eating a low-fat and low-calorie meal does not mean you have to skip the beef. Choose beef that has been trimmed of all fat, and simmer in tomato sauce and water until tender. Add vegetables such as celery, squash and bell peppers, and flavor with balsamic vinegar, chili powder, sea salt, olives, garlic cloves and fresh or dried herbs. A serving of beef stew will give you about 320 calories, including 14 grams of total fat, which is 22 percent of the recommended daily intake.
